Are ストライプ and 縞模様 interchangeable? Are they just different name for the same thing? If they are, which one is more common?
I have come across a lot of Japanese words that also have another version in katakana derived from foreign language, mostly English language such as ツー and に for two and so on. Are the katakana versions for Western or modern stuff?

Yes, interchangeable. They are just the different name. 「ストライプ」 is a loanword and 「縞模様」is a Japanese word.
Both are common today but I think young people tend to use loanwords and the people who use loanwords might increase because some people feel them cool and feel 「縞模様」 outdated.
The katakana versions are not for westerners but for Japanese. They sometimes give us modern feelings, so they are widely used in the fashion world.
Apart from this, when words are new for Japanese and cannot be properly translated into Japanese, they are often used in katakana as loanwords.

’ if you remove ’ と(書いて) ありますが、シャツのデザイン過程についての話ですか? もしそうなら「除く」ことは可能ですが、すでに出来上がって製品になっているシャツのストライプ部分を除くことは不可能なので、その場合は、仮定として「ストライプがなければ(デザインされてなければ)」のほうが自然かもしれません。
