Well, it's a bit difficult to explain (even for japanese people) but 開ける (あける) is a transitive verb so most of the times goes with the particle を and it usually means that your are taking away some kind of obstruction to reveal the contents within something. For example: ふたを開ける means "To open a lid/cap/cover" because you remove the obstacle (the cover or lid) and reveal the contents of a box or something.
As for 開く (ひらく), it usually has a sense of you "sliding or moving something" (to remove the obstacle) and reveal the contents within something. For example, you wouldn't say 本を開ける because you are not removing the book to read it's content, right? You would move/slide it's pages to read it. So you'd say 本を開く.
That's the main difference between them.
Although 開く is also used to say... Opening a bank account 口座を開く, hosting a party パーティーを開く, opening a business or a shop 店を開く, etc.
