Q: Today is gonna be better (...) と Today will be better (...) はどう違いますか?
A: "Today is gonna be better (...)" infers that there's a chance the day will be better. Meanwhile, when you say "Today is going to be better (...)," you're ensuring the fact that this day WILL be better, rather than saying it will be better by chance.
Q: Today we're gonna talk about... と Today we're gonna be talking about... はどう違いますか?
A: i think in this case there is no nuance difference, they are both shortened, more informal ways of saying the same thing. :)

here the difference is whether you're using basic present tense or continuous present tense, but it makes no difference for this specific sentence. which one you use is just down to your way of speaking.

in a formal setting though both should be avoided, and the longer versions without the contractions should be used.
Q: "Today is Monday, the start of a new week. Hope you're doing well" と "It is Monday, the start of a new week. Hope you're doing well" はどう違いますか?

Q: Today is so hot. I wish it been autumn now. Does this sound natural??? 🙅“×”→ は 英語 (アメリカ) で何と言いますか?
A: It's the subjunctive. You use "were" when you're talking about something that isn't true or you're being wishful.

However, it's common for Americans to use "was" in casual conversation.

A lot of English speakers can't tell the difference, so don't worry. Just make sure you use "were" in writing.

Q: Today, I really regretted to wear thin clothes, in spite of cold day. I decide that I will watch the weather cast before taking a action. この表現は自然ですか?
A: × Today, I really regretted to wear thin clothes, in spite of cold day.
✓ I really regret wearing these clothes today. They're not warm enough for this cold weather.

× I decide that I will watch the weather cast before taking a action.
✓ I decided that I will watch the weather forecast before choosing my outfit for the day.

"I regretted to do x in spite of y" means: I knew about y, but I did x anyway (even though I felt regret about doing x).

I'm guessing you mean: I didn't watch the weather forecast, so I didn't know it would be cold today, and I chose an outfit that wasn't warm enough.

Another way to fix this is:
(Regrettably,) I only wore a light jacket today. From now on, I will watch the weather forecast!

"Thin" is ok for jackets, blankets, and fabric, but it makes it sound like the jacket/blanket is worn out and you can feel the cold wind coming through the fabric.
For clothes, "a light cotton shirt" or "a light silk skirt" is better.
"Lightweight" is a generic way to say a type of fabric is good for wearing during summer (lightweight cotton, linen, or silk. as opposed to heavy wool or twill.) Jeans/denim are usually heavy, but they can be made lightweight.

× I’m planning to list up all things to buy and visit off-line and on-line store for this period.
✓ I’m planning to make a list of all the things to buy, and physical and online stores to visit during this period.
