I was taught these phrases いっていきますand　いっていらっしゃい. When I asked my teacher if she wrote the second い by mistake, she insisted on these being the correct phrases. She said いきます was necessary for the polite form.

I searched google and there were a small number of results coming up, so I'm confused.

いっていきます is incorrect. いってきます is correct.
いってきます = 行って、来ます = GO out and will COME back here.
If いっていきます, it would be 行って、行きます = GO out and GO out... Where do you come back?

いっていらっしゃい is a strict and correct Japanese phrase.
We have an other phrase いらっしゃいませ, it means welCOME, so いらっしゃい is a polite form of come/came.
いっていらっしゃい = 行って、いらっしゃい(polite form of come) = GO out and please COME back here.
But in modern days, いっていらっしゃい has been changed to いってらっしゃい in order to pronunciation easier.

I guess that your teacher isn't a Japanese.

As far as I know, I don't know any Japanese who says いって"い"きます. I think いってくる can be decomposed into いく and てくる.
