It’s not exactly the most traditional Italian dish but you can find some ideas here:

Please just avoid putting cheese (like Parmesan) on it, it’s something we never do with seafood dishes…

@jorge51020286 nope, traditionally we don’t put cheese (especially aged cheese like Parmesan or Pecorino) on seafood dishes, whatever they are (rice, pasta, pizza, soup, salmon steak, fish filet, etc).
The only exception regards mozzarella cheese on pizza: sometimes you can find it together with tuna fish or anchovies (this is still acceptable).
I’m not saying that it’s always illegal (like putting pineapple or ketchup or mayonnaise on pizza that is a true crime), it depends on the dish and the type of cheese (e.g. you can find some interesting gourmet recipes with Gorgonzola cheese and fish), but it’s not something traditional for sure. Parmesan cheese is perfect for pasta with tomato sauce or ragù or pesto etc. , Pecorino is perfect for Carbonara, Cacio e Pepe, etc. but they are not a good fit for seafood dishes.

@Gino_Vantuno what about using cheese to make sauce or whatever that liquid of pasta is? (The one that can be of any color and colorish the pasta)

@jorge51020286 if you create a liquid Parmesan/Pecorino cheese sauce in order to put it on a seafood dish like Cacciucco or linguine allo scoglio or fregola alle arselle, please, trust me man, in Italy you’ll risk your life…

@jorge51020286 well, cream and salmon are a good fit. Pasta with cream and salmon (usually smoked salmon) is a simple dish sometimes made by students during parties.
But it’s cream (= “panna da cucina”, the one that must never be put on Carbonara, in order not to be fed to the lions in Rome) and not cheese (especially aged cheese).
Anyway, putting some cream on traditional dishes like Cacciucco, risotto ai frutti di mare, pasta allo scoglio, riso patate e cozze, fregola con le arselle, pasta con le sarde, etc. is a true crime as well.

@jorge51020286 if you want to cook a seafood dish in a traditional Italian way you shouldn’t add cheese to any sauce / cream. But if you cook a dish like pasta salsiccia e panna (see: https://blog.giallozafferano.it/ricettiamoconma...) you can put some grated Parmesan cheese on it, because it’s a dish with meat and not with fish. Anyway, we don't use cream that much, we prefer other types of white sauce like besciamella (and if you cook lasagne or pasta al forno with besciamella and meat/vegetables but with no fish you are free to put some grated Parmesan cheese on it).
